Bake 6: Brioche. The other major component of this week’s bake was brioche, but the main event only called for half the recipe so I turned the rest into this braided beauty! We slathered that baby with some German plum jam from Acorn Creek Farm that I picked up at the @carpfarmersmarket on Saturday and man oh man was it delicious! So buttery and fluffy! I wouldn’t want to make this by hand, but if you have a stand mixer and 8 hours to let it rise, you should definitely give this recipe a try! However as @csaffitz knows, no matter how well equipped you feel for a bake sometimes it just doesn’t turn out. This was my second attempt, my first was a bit of a disaster. On my first go-around, the dough barely rose and then it was so dense that I severely under baked it. It was so raw that the middle oozed out when I sliced into it (swipe to peep that disaster)... So I did some research, doubled the amount of yeast called for in the recipe, and baked it an extra 15 minutes. I may have ever so slightly over baked the second loaf, but there was no raw dough in the middle and it was still delicious so I’m calling it a win! I don't think you guys were ready for my Saffitz obsession, but her new cookbook is amazing. A little nerding out: I usually go with P. Reinhart's "Poor Man's Brioche" from Bread Baker's Apprentice with a 23% and 38% baker's percent of butter and egg respectively. C. Saffitz recommends 43% butter and 57% egg! That's a rich dough! I appreciate that she finds the *perfect* applications for it. Like these little twists with just enough bright, cutting flavor from the coriander. Excellent coffee accompaniment. I also made some with cardamom and they were equally nice. You know what is really useful for me in very anxious times? Cooking something kind of involved and stressful, like a pork chop that needs to be seared on all sides, and a salad with multiple components that needs to be thinly sliced, and a gremolata-like mixture of shallot & hazelnuts. When I’m face-and-eyes into a recipe, I can’t refresh Twitter and I can’t get lost on the scroll. Bonus points if you make it in your cast iron skillet, making a two-handed chore of scouring and re-seasoning it. 🍖 This Date Night Pork Chop by @csaffitz was delicious and hearty. I’m a big fan of the @adamerace school of photography (take-it-outside!) and love how you can see all the different textures in this dish. The endive, apple, and Parmesan salad is one I can see myself returning to a lot as a light and fresh side to any number of heavier dishes, and would be at home at a lot of holiday meals. 🍖 Another thing that helps me: finding people in my community who need support, through mutual aid orgs or direct requests like this. No matter when we find out how many votes were cast and for whom, there will always be people who need support and care, and community care and support is, to me, the clearest model to directly affect change. @phreedomjawn provides so much valuable news and content to Philadephia. It is a real privilege to be able to help support that work.

These fall in the category of "quiet moment desserts". They're "Brown Butter and Sage Sables" from @csaffitz Dessert Person (p 131). I first tried them after a mouthful of halloween candy running around doing chores, and with the smell of dinner in the background. And they were ok. I couldn't say it was worth the extra trouble of infusing butter. I tried them later, calmly without distraction or other food just before bed. Queue the involuntary smile where the world fades away and all focus is on the cookie and the present moment. Just the right amount of sage to make you pause. Wonderful contrast from that sandy delicate cookie and the course sage sugar coating. Pumpkin Szn extends well into November for me, especially when it means eating this beautiful @csaffitz pumpkin sheet cake, topped with marshmallows that are gently bronzed under the broiler to make the easiest dreamiest “frosting.” 🎃 The cake is tender and delightfully spiced, while the pumpkin’s sweet vegetal nature remains present. I shared this cake with several friends and family (including @chefashe who sent me that first gorgeous photo!), dropping it off on a whistle stop pumpkin cake tour of Philadelphia, and they all reported back: this cake is delicious and comforting and tastes like all the best parts of fall. 🎃 What’s spoooookier than ghouls and goblins? First Dessert Person recipe: speculoos babka, a delicious cinnamony variant on the babkallah I’ve made and love so much. The smell and the taste are homey and reminiscent of the holidays ahead. 🍥 Today it snowed where my parents live, and I toasted a slice of babka and put butter on it and felt warm inside. Wow oh wow has it been a while! This year has been so exhausting, I’m finding it hard to even put aside time to do things I love, like bake. Dessert Person is out! I’m already paging through it and brainstorming plans for when and how I’m going to make all the beauty in its pages. One recipe I’ve seen pop up online already is the malted “forever” brownies, and before I get into them, I thought I’d give the fudgy brownies developed by @csaffitz for @bonappetitmag another shot. 🍫 I made these brownies over the summer (rushing, while doing like three other things, low on dishes) and was really disappointed in them; it turns out it’s because I made them wrong. Melted chocolate and butter are mixed with eggs and sugar first, then flour and salt and leaveners are mixed into that. Done in another order, they didn’t fully come together. When I followed instructions and took my time, they came out fudgy, perfect, toothsome, rich and chocolatey. I’ve put some in the freezer to compare to the malted ones in Dessert Person soon. 🍫 I’m a dessert person and I’m also a Book Person. Getting a new book in the mail or from the library during release week is such a joy. I bought my copy through @bookshop_org benefiting my local bookstore @anovelideaphilly and I’ve also made a donation to @mutualaidbooks an org getting books by BIPOC authors into the hands of folks in Seattle. 🎉 pub day!!! 🎉 This recipe for a root vegetable galette was in the bonus booklet I got for pre-ordering Dessert Person; it was a lot of work and unfortunately it was worth every single step. 🍠 Slicing, peeling, mandolining, and roasting celeriac, rutabega, sweet potato, and butternut squash; making a ricotta filling with roasted garlic; and making a multi-step, multi-rested all butter pie dough was a lot of work for a Tuesday dinner, but I absolutely adore the outcome. Most of the steps are in my story for you to watch! 🍠 I’m so excited for everything this book has in store for me. I can’t wait for my copy to come later this week and dive in! I’ve been low on inspiration these days. That’s why I love cookbooks and food blogs and food instas: they remind me of the simple joy of following a recipe, and the deep comfort of a warm meal. I’m continuing to try to cook new meals and not just relying on old standbys. Hence, this chicken paprikash, which gave me the delight of trying something new and the comfort of getting to recite the bit from When Harry Met Sally over and over again. 🍗 I think if I were to make this again, I’d use my stick blender to purée the sauce, I’d add more garlic, and maybe some sumac to bring that punchy brightness without losing the creamy tang of the sour cream. But the eggs noodles tossed just with butter and parsley were so simple and delicious, and a good reminder that sometimes it’s okay not to want to try too hard. 🍗 I’m making my grocery list for the week as I write this post, and I’m digging through my fridge to find out what needs replacing or using up. This is always such a privilege that I am lucky to enjoy. I’ve made another donation to @phlcommunityfridge who are working to keep fridges full all over Philly.
Today is Canadian Thanksgiving, or, as we call it in Canada, Thanksgiving! I’m celebrating with my first ever GUEST POST: my darling spouse @kingbearsuit who chose to make @csaffitz @bonappetitmag ‘s Best Buttermilk Biscuits. 🍁 These little biscuit babies use a very interesting technique to build their flaky layers: you shape, cut, stack, and re-roll the dough once to preserve the layers, then freeze them briefly to re-chill the butter before baking. Buttermilk brings so much tanginess and butter brushed over the top adds richness and colour. This recipe is a real win, and will definitely be making an appearance at our American Thanksgiving celebration. 🍁 It’s also Indigenous Peoples’ Day. I grew up on unceded Beothuk land and currently live on unceded Lenni Lanape land. I encourage you to find out whose land you live on. Whew, what a wild few days and weeks and months and years it’s been, huh? Tonight I made @csaffitz one-skillet chicken with buttery orzo and it was comforting and bright and delightful, the perfect calming antidote to a difficult world. 🥘 I love cooking dinner. I love assembling and chopping and combining. I learned to cook from television, most notably from Food Network reruns over the summers between school years. I learned about wild and complex flavors, but was always hesitant to make anything too weird at home. Now I’ve cooked more these past six months than I have in years, and I truly have found myself without any fucks to give. I’ll order whatever weird ingredient, I’ll take on whatever elaborate complicated process. Tonight I conquered my fear of fennel: instead of being overwhelmed by the liquorish-ness of it all, I found the warm, mellow sweetness of the bulb and the bright, herbal tang of the fronds to be a welcome partner to golden chicken thighs, toasty whole wheat orzo, and my two forever girls, butter and lemon. This dish has all the depth and coziness of chicken noodle soup, and the heartiness of a risotto, in a fraction of the time of either. 🥘 Apropos of almost nothing: you know what would be really great? If anyone and everyone worrying about their health could easily access care without fear of the cost. Chicken soup is great; self-care is great; accessing needed medical care is pretty important too.

Gloomy Monday pasta: @csaffitz baked penne with sausage & greens. First in a series I’ll call This Was Good But I Have Thoughts! #twgbiht 🥬 What I liked: the fontina & sausage & rabe together were delicious. But some thoughts: a quarter cup of oil felt WILD to me, and reducing half & half into the leftover oil without making a roux first left me skeptical. Sure enough, the sauce split while baking, leaving a slick of (flavorful, but greasy) oil in the bottom of the bowl. I’ll make this again, but I’ll reduce the oil, add flour to make a roux and then a bechamel with the half and half. I’ll also reduce the amount of pasta to make a thicker, creamier dish. 🥬 I’m learning to trust what I know and to critique what I’m reading, just as I’m learning to know my blind spots and seek out more knowledge. It’s a Monday; there’s a whole week ahead. Here’s a list of orgs in Louisville doing necessary work towards healing. Aaaaaand just like that, it’s summer again for a few days. Here’s a refreshing afternoon idea: @csaffitz’ strawberry-rose agua fresca. 🍓 The rosewater and mint are lovely with the strawberries, and my jet engine of a nutribullet blender made the purée silky smooth. I used golden syrup instead of agave as it’s what I had on hand, and next time I’ll try it with lemon instead of lime since I love strawberries with lemon so much. It’s super pretty and very refreshing. (You could probably sneak a little gin or white rum into this to turn a mocktail into a cocktail, if that’s where your Wednesday is headed.) 🍓 Making this pretty, light and bubbly drink felt like a moment of rest and reset, especially after hearing about even more shitty news, this time from Louisville KY. This moment of brightness made me think of my teacher and friend @adrianaadele who is a proponent of both hydration and intentional rest. Her Breathe + Rest classes provide both a space for Black people to experience physical restoration, as well as an opportunity for white and non-Black yoga practitioners (and people!) to fund these classes and support a charitable cause. For the next six months, this will be the @decolonizing_fitness Black Trans Housing Fund. I’m proud to be a supporter of this work and to be Adriana’s student. She has taught me so much about yoga, from my hamstring connections to my role in the work we all have to do to birth a kinder, more just world. Rest is important! I encourage you to make yourself a delightful beverage and daydream about ways you can find some rest, and some ways you can help others feel restful, too.

A first taste of real fall weather (yay!) and yet another bad news story (ugh!) has me looking for comfort food, which to me is found in rich macaroni & cheese, snappy sautéed green beans, and the crispiest chicken tenders I’ve ever made: @csaffitz ‘ Magic Crispy Chicken. ✨ Whether the magic is in the simple but flavorful seasoned mayo-and-mustard that you first slather on the chicken, or in the olive-oil-fried panko that you then coat the tenders in, or in the delicious, crunchy alchemy that happens when they bake together, this is a winner for sure. My best friend @chefashe used the same method to coat zucchini with excellent results, and we brainstormed an idea to add some lemon (juice in the mayo, and zest in the breadcrumbs) to make fried fish, which I’ll have to try the next time I need a comforting dish. Going by the rate of the current news cycle, I’m sure I won’t have to wait too long. How’s that for a golden, crispy, bright side? ✨ Once we’ve comforted ourselves, let’s look to the needs of others. Political campaigns and organizations fighting for our rights are very deserving right now, of course, but so too are the people in need in our communities. It’s hard to talk about cake when the world feels so hard. But cake helps. 🍎 @csaffitz ‘s walnut upside down cake has a tender crumb and a deep flavor from well-toasted nuts, and is studded with bronzed apples in their own sweet-and-bitter caramel. It survived my terrible attempts to flip it and still tasted as good even after I finagled it onto a plate for slicing. 🍎 If there’s a metaphor here, maybe it can be that we, too, can experience our world flipping upside down and still find our footing. It’s realllly starting to feel like Fall, and all I wanna do is eat pasta all the time. This better-than-takeout sautéed udon with pork and cabbage from @csaffitz came together almost as quickly as the thirty-second video of me making it, and disappeared even faster. 🍜 The sweet-savory soy and mirin sauce coated the udon and the vegetables so well. I’m already excited to make it again with different vegetables; bok choy, carrots, and mushrooms are definitely going to make an appearance next time. As will a significantly cleaner stove! 🍜 As I figure out how best to make my efforts to support mutual aid efforts sustainable, I feel really lucky to have access to organizers on Instagram and Twitter who signal boost the needs of people in Philly, including @blacklgbtqreparations. 🎉 Challah Season! 🎉 @csaffitz honey tahini challah is beautiful and, more importantly, DELICIOUS. The addition of tahini in the dough gives the bread a subtle sesame flavor and also an unreal silky texture. My favorite way to eat challah, because I believe in truly gilding the lily, is slathered in butter, honey and flaky sea salt; this loaf more than passed my test. You can watch me make and braid it (into round loaves for the holiday!) in my stories! 🍯 I’ve been celebrating Jewish holidays for almost a decade now, and Rosh Hashanah, the Jewish new year, is very special to me. September has always felt like a fresher start to me than January; I’m a basic b who loves fall, I’m a big nerd who loves school, and now I’m a married-into-Jewishness-wife who loves challah and honey and wishes for a sweet new year. 🍯 I’d like to pass along some of those wishes to kids who need school supplies. @phillymindset is an org doing just that, and their target and amazon wishlists are available for shopping today. Currently, their focus is on loose leaf paper, trifolds, post-its, headphones, and highlighters, though any donations made will be appreciated. I’ve shopped their lists today and I hope you will, too. Let’s make it a sweet new year for Philly kids!
Steak salad with shallot vinaigrette, corn, tomatoes, butter lettuce, and cucumbers. A perfect @csaffitz Labor Day dinner: sweet, fresh, tangy, hearty. 🌽 Jersey corn and fresh thyme cooked in butter and the steak’s pan juices was a particular revelation, as was the way the recipe instructed me to arrange the vegetables, adding the sharp, punchy dressing with each layer. 🌽 In honor of Labor Day, I’ve chosen to make a donation to @thenapministry an organization that reimagines rest as an act of resistance. The importance of caring for ourselves and taking deliberate time to rest cannot be overstated. For me, yesterday, rest looked like an afternoon nap, cooking a nurturing meal, and eating it slowly. I hope you took time to rest this weekend and I hope you have more rest in your immediate future, and that you can encourage your loved ones to do the same.

Summer’s last official weekend calls for sweet juicy strawberries coated in cool, grassy matcha-tinged white chocolate: @csaffitz ’ matcha-dipped strawbs were fun, easy, and pretty to look at. 🍓 It’s been a weird summer, so this unusual take on a typical dessert really hit the spot for me. The chocolate and coconut oil become smooth and glossy; I’m newer to matcha, but its earthy sweetness works well with the strawberries, and it’s super fun and messy to dip them. 🍓 The first tinge of fall is in the air here in Philly, but there are plenty of places in the country that are still scorching. I’ve made a donation to @waterdropla which brings cold water to the unhoused in Los Angeles. Maybe throw them a few bucks if you’ve got it, and consider chilling some water for the sanitation workers and postal workers who spend all day every day outside. Supporting each other feels really good. Enjoy your long weekend, if you’ve got one. We made it to September! We can do it.
Winner winner chicken dinner: @csaffitz ‘s roast chicken with bell peppers, lemon, & thyme. Wow, wow, wow, this was so easy and so luscious; the peppers get so silky, the chicken skin gets so crispy, and the acid and herbs add so much flavor and depth. 🍋 The calendar turning to September feels so weird; wasn’t it just March? Has nothing changed? Has everything changed? Some things stay blessedly constant: chicken and aromatics roasted in a pot will become bronze and fill the house with a delicious deep aroma. 🍋 Other things need to change, like our cultural approach towards the unhoused who need our support. I’ve made a donation in support of @campjtd an encampment here in Philly in support of universal housing. I hope you’re taking care of yourself, which can feel difficult enough. If you have the energy, time, and dollars to do so, I hope you consider putting some of it towards community care for others in need.
Weekend treat: @csaffitz ‘s peanut butter blondies for @basically baking. I used skippy peanut butter and dialed the brown sugar down 1/4 cup and these blondies came out lightly sweet with a delightful cakey texture. They were fun to make, too; I loved making divots in the batter to dollop the melted peanut butter mixture into, just before baking. 🥜 Because I can’t leave well enough alone, and because I live with a chocolate & peanut butter addict, I added chocolate chips to half, but next time (and there WILL be a next time) I’ll do a drizzle of melted chocolate afterwards. I could see these adapting well to other nut butters, too. 🥜 Chocolate & peanut butter together are so comforting to me. I’ve made a donation to @no_moresecrets469 an organization working, among other efforts, to end the stigma around periods and increase access to menstrual products. We all deserve comfort. I hope you make something comforting this weekend, and maybe you’ll join me in supporting this org as well.
Maybe more of a brunch-y recipe than a dinner one, but delicious all the same: @csaffitz ‘s savory dutch baby, smothered in bacon, avocado, sautéed mushrooms & tomatoes, and sunny side up eggs. 🍳 The batter whipped up quickly in the blender and puffed up beautiful and bronze. It tastes like a delightful crepe and I’m already thinking of different ways to dress it up: a tangle of roasted vegetables, pesto, and mozzarella cheese, or a smear of cream cheese, tons of dill, smoked salmon and capers. 🍳 In honor of both my new niece, Frances, and the eponymous “baby” of this recipe, I’ve made a donation to @dipes_n_wipes a mutual aid org providing supplies to the littlest Philadelphians and their caregivers. 🍞 sourdough bread • like many others, I began a sourdough starter during quarantine & boy oh boy has it taught me the art of being patient! it took over a month of feeding the starter daily to get it to a mature & happy place to produce halfway decent loaves & even now, several months in, I’m still bumbling my way on through! these images are from this weekend’s sourdough baking attempt. as you can tell, the crust is a bit of a yikes! 😅 after the 3-day long process of making a sourdough loaf & every step producing the results I needed to see to a TEE, I messed up the final step in which I forgot to turn down the heat in the oven when I uncovered the loaf to bake, therefore burning the crust 🙃 (clearly, I’m not a baker!) at least the insides taste suuuper delicious though! • I tried the @nytcooking sourdough bread recipe this time, which I was delighted to discover was developed by queen of my heart @csaffitz! Up next: @csaffitz ‘s swirled sesame tea cake. The texture of this cake is lovely, with the gentle crunch of the sugar-and-seeds coating giving way to the plush interior. I love sesame, and getting to eat it three ways in one bite (seeds, oil, and tahini) in a lightly sweet snacking cake is an absolute delight. ☯️ When I took stock of my pantry to make this cake, I realized I had forgotten to get black sesame seeds, the source of the extremely cool swirl inside. So I placed a new grocery order! The ease of receiving groceries, even last-minute, niche ingredients, is a privilege I don’t take lightly. I’ve made a donation today to @phlcommunityfridge, which places fridges in communities all around Philly, offering mutual aid pantries. memory lane: this easter, I made @csaffitz ‘s morning buns. it was an involved process with cozy, delicious results: a tender dough and a delightfully crispy exterior. it felt good to knead and manipulate an enriched and yeasted dough, which was very forgiving despite my inexperience with either. plus, I’m a sucker for a well-defined swirl. 🍥 cinnamon buns, with their warming spices and gooey centers, are such a comfort for me. My first sourdough loaf! This truly was the product of A LOT of time and mothering so I feel like I can safely say that this... is my baby. I speak for Glenda (my starter) when I say that she has been living her entire life despairing over her lack of accomplishments. But no more! For 5 entire months she has been waiting for me to pluck up my courage and attempt the arduous process that is bread-making, but I - in true chronic procrastination fashion - kept pushing her to the side in favor of using her discard (of all things!) to make various edible goods, ignoring her true destiny. I made excuses ranging from the average "I'm too busy" (truly laughable in the face of quarantine) to the oddly specific and obscure "she hasn't quite reached the bubblage + hoochiness that I want". But today (or rather, 2 days ago) I have finally embarked on the journey that is her true calling and created: the sourdough loaf. Credits go to @csaffitz for her detailed recipe on @nytcooking because without her idk if Glenda's dreams would ever actually manifest #iwdfcftbatk Now that I've done it once though, I'm definitely itching to do it again; but of course, now WOULD be the time I decide to hop on over to the other side of the country 🙄 will Glenda take the trip with me? Mango Sticky Rice🥭 Thai food is probably my favorite cuisine ever! I love the use of spices and nuts in the more savory dishes, but my favorite meal is mango sticky rice. It’s warm sticky rice covered in a sweet sauce served with fresh honey mango and topped with sesame seeds. My mom and I had a tradition where every time after I took a standardized test (PSAT, SAT, etc.) She would take me out to get mango sticky rice after!
